Fabulous Friday: Cocktail Hour

Aoife, Cambridge

We are moving house in a couple of weeks. I'm currently trapped in a wasteland of half packed boxes. We have house guests staying but instead of visiting the sites of Cambridge and going out for fancy meals they get to help us organise our music collection (the retro highlight: Oasis CD singles given to me by my first serious boyfriend) and sort through six years worth of gardening debris in the part of the balcony I optimistically call "the shed". Packing up all your possessions into boxes in a small one bedroom apartment leaves only a tiny amount of floor space, and is not conducive to glamorous, relaxed cocktail drinking. However some kind of refreshment is necessary to keep my volunteers (and myself) going though the madness. The borage flower ice-cubes are another consequence of moving and the necessity to use up the contents of the freezer, plain ice would be fine if you are not putting yourself through moving hell. This ginger and rhubarb combination is refreshing but has enough kick to stop my impending nervous breakdown in its tracks.

rhubarb and ginger cooler (serves one)

1 lime, cut into quarters
ginger beer

Into a tall glass, squeeze the lime wedges and leave in the glass, add the rhubarb vodka, fill the glass with ice cubes and top with ginger beer. Drink with a straw to get the refreshing goodness into you as quickly as possible.
