Fabulous Friday: Cocktail Hour

Aoife, Cambridge

This week's cocktail uses vodka infused with Seville oranges. This stuff is bitter, it's definitely a grown-up's vodka. I infused 500mL of vodka with the peel of 3 Seville oranges back in January. I let them get to know each other for about a month before filtering out the peel. I then added a little sugar (probably about 100g) and bottled. Even with the added sugar, this bitter flavour of the oranges comes through clearly. But bitter is good, a wonderful cocktail ingredient to balance sweeter ingredients. For this cocktail I couldn't resist casting a spice infused sugar syrup in the sweet role. I heated water (100mL) and sugar (100g) until they formed a clear solution and allowed 5 crushed cardamom pods, a star anise and half a cinnamon stick to infuse for 30 minutes. I then filtered out the spices and kept the syrup in the fridge until I was ready to use it. I have been known to favour the classic cocktail the French 75 and this is another variation on it I suppose. Perfect for a Friday night after a long week in work.

Word of warning - this cocktail revived me so much last Friday night I ended up staying up until 3.30 am drinking ridiculous amounts of red wine. Be careful with it.
