|Flaming the Key Lime Pie|
I have reviewed The Exchequer on the blog before and it's no secret that it is one of my favourite cocktail spots in Dublin. I was therefore filled with equal amounts of excitement and trepidation when I heard that they were launching a new cocktail menu. Would the cocktails still be as good? Would I still be able to order my favourite cucumber and mint daiquri?

Well, the daiquiri is gone but I needn't have been concerned about a dip in quality of the cocktails. After an extensive sampling of the menu last week I am in no doubt that I have plenty of new favourites to chose from.
Despite it's small notebook-style size, The Ledger of Liquor, as the new menu is called, is quite a read. It's packed full of detailed descriptions of the cocktails and their ingredients and was encouraging me to be quite antisocial with my friends while I devoted my full attention to it.
|Infusing the Old Fashioned with smoke|
There is a huge amount of creativity on show with the new cocktail offerings and I was very glad we had secured seats at the bar so that we had a full view of the goings on, though I was a little concerned we'd be going home with no eyebrows the first time the blow torch came out! Molecular gastronomy style spherification, a smoking gun, an ice ball press, and the aforementioned blow torch are all employed to make these some of the most unique and unusual cocktails I have tried in Dublin.
If I was forced to choose a favourite I would have to pick the Smokey Old Fashioned as I found the flavour produced by infusing it with smoke incredible. A special mention for dramatic flair would have to go to the Key Lime Pie and it's caramelised meringue topping. All of our cocktails were €9 or €10 which I feel is as about as good value as you can get in Dublin for a quality cocktail. I had been hoping that the cocktails here would be as good as they had been previously, I was impressed at how much they've managed to raise the bar for fun and quirky and, most importantly, potently delicious cocktails.
