Fabulous Friday: Cocktail Hour

This week's cocktail is another variation on the strawberry and rhubarb theme. It seems a pity not to use up the seasonal bounty and for this cocktail you can use strawberries that are overripe or a bit mushed. You sometimes see these for sale at a low price in the market labelled as "jam strawberries" but in my house cocktail making takes priority over jam making.

I'm using my favourite rhubarb vodka here again. You still have time to make some before the end of the rhubarb season. To my mind it's the cheapest and easiest flavoured spirit to make yourself: a great one to start on. It's also ready very quickly and doesn't involve waiting around for months (I'm thinking of you sloe gin).

This cocktail is easy to prepare and absolutely delicious. So delicious you will definitely want more than one. If I was making a big jug of this, I would probably puree a punnet or two of strawberries in the food processor and then sieve it all to get rid of the pips. For just one or two I simply mash the strawberries in a bowl with a fork and push the resulting mess through a small sieve.

recipe strawberry rhubarb (makes one)

40mL rhubarb vodka
30mL sieved strawberry puree (about 6 strawberries)

15mL simple syrup (1:1 sugar and water)
15mL freshly squeezed lime juice
2-3 drops of rhubarb bitters
Garnish with a strawberry
Combine all of the ingredients in a shaker, add ice and shake hard for 30 seconds. Strain into a cocktail glass. Garnish with a skewered strawberry.
